1.5kg floury potatoes, such as Maris Piper or King Edward, peeled and cut into wedges
Low-calorie cooking spray
8 back bacon rashers, visible fat removed

For the salsa:
1 red onion, deseeded and finely chopped
1 red pepper, deseeded and finely chopped
1 green pepper, deseeded and finely chopped
1 bunch spring onions, finely sliced
Juice of 1 lime

For the chive & onion dip:
200g fat-free natural Greek yogurt
10g fresh chives, finely chopped
½ tsp onion granules
