Ingredients
500g potatoes, cut into chips
1 large onion, sliced
low-calorie cooking spray
2 tsp dried oregano
200g small mushrooms
4 eggs*
2 large tomatoes, halved
Preheat your oven to 200˚C/fan 180˚C/gas 6.
Tip the potatoes into a large, non-stick roasting tin and spray with low-calorie cooking spray. Sprinkle over the oregano, mix well and roast for about 30 minutes or until the potatoes are starting to go brown. Add the onion and mushrooms and cook for a further 15 minutes or until the potatoes are browned and tender.
Make 4 wells in the vegetables and crack an egg into each of them. Add the tomatoes to the tray and return to the oven for 5 mins or until the eggs are cooked to your liking.
