Slimming World Syn-free brown rice and green veggie salad - FREE

1 large courgette, diced
125g long-stem broccoli
100g green beans, trimmed and halved
100g sugar snap peas
150g dried brown rice
6 spring onions, sliced
juice of ½ lemon


Put the courgette and 2 tbsp water in a large non-stick frying pan over a high heat. Season lightly and steam for 2-3 minutes or until just tender, stirring now and then.
Add the broccoli green beans and into a saucepan of boiling water over a high heat and cook for 2 minutes. Add the sugar snap peas and cook for a further 2 minutes. Drain all the vegetables and mix them into cooked brown rice. Add the onions, drizzle with lemon juice and season to taste. Cover and chill before serving.
Slimming World Tip: Add frozen peas or broad beans and stir through fresh mint. Add tofu, tuna, salmon, cooked chicken or ham if preferred.
