Ingredients:

  • 1 lb. of steak bites (sirloin or ribeye works great)
  • 1/2 lb. of small potatoes
  • 3 tablespoons of butter
  • 4 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Begin by preparing the potatoes. If they are larger, you can cut them into smaller, bite-sized pieces. Parboiling the potatoes can help speed up the cooking process. Boil them in salted water for about 5-7 minutes until they are slightly tender but not fully cooked. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of butter over medium-high heat. Add the steak bites to the skillet and season them with salt and pepper. Cook the steak until it’s browned on all sides, about 3-4 minutes. Remove the steak from the skillet and set it aside.
  3. In the same skillet, add the remaining butter. Once melted, add the minced garlic and dried thyme. Cook for about 1 minute until fragrant.
  4. Add the parboiled potatoes to the skillet. Cook them for about 5-7 minutes, stirring occasionally, until they are golden and crispy on the outside and tender on the inside.
  5. Return the cooked steak to the skillet with the potatoes. Toss everything together to combine and cook for an additional 2-3 minutes until the steak is heated through.
  6. Taste and adjust the seasoning with salt and pepper if needed.
  7. Garnish with fresh chopped parsley before serving.
