Ingredients:
- 1 lb. of steak bites (sirloin or ribeye works great)
- 1/2 lb. of small potatoes
- 3 tablespoons of butter
- 4 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Begin by preparing the potatoes. If they are larger, you can cut them into smaller, bite-sized pieces. Parboiling the potatoes can help speed up the cooking process. Boil them in salted water for about 5-7 minutes until they are slightly tender but not fully cooked. Drain and set aside.
- In a large skillet, heat 1 tablespoon of butter over medium-high heat. Add the steak bites to the skillet and season them with salt and pepper. Cook the steak until it’s browned on all sides, about 3-4 minutes. Remove the steak from the skillet and set it aside.
- In the same skillet, add the remaining butter. Once melted, add the minced garlic and dried thyme. Cook for about 1 minute until fragrant.
- Add the parboiled potatoes to the skillet. Cook them for about 5-7 minutes, stirring occasionally, until they are golden and crispy on the outside and tender on the inside.
- Return the cooked steak to the skillet with the potatoes. Toss everything together to combine and cook for an additional 2-3 minutes until the steak is heated through.
- Taste and adjust the seasoning with salt and pepper if needed.
- Garnish with fresh chopped parsley before serving.
