Ingredients:
- 1 cauliflower
- 1 broccoli
- Olive oil
- 1 onion
- 1 carrot
- 2 cloves of garlic
- 4 eggs
- Salt
Instructions:
- Prepare the Vegetables:
- Cut the cauliflower and broccoli into small florets.
- Peel and chop the onion.
- Peel and grate the carrot.
- Peel and mince the garlic cloves.
- Cook the Vegetables:
- Heat some olive oil in a large pan over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic and cook for one minute.
- Add the cauliflower and broccoli florets, as well as the grated carrot. Cook for about 5-7 minutes, or until the vegetables are tender but still slightly crisp.
- Add the Eggs:
- Beat the eggs in a bowl with a pinch of salt.
- Pour the beaten eggs into the pan with the vegetables and mix well.
- Cook, stirring frequently, until the eggs are fully cooked.
- Season and Serve:
- Taste and adjust the salt if necessary.
- Serve hot.
