Slimming world Chicken & mushrooms

Serves 4

Ingredients

1 Red onion, sliced (s)
1 Red pepper, finely chopped (s)
1Tbsp dried sage
1 Tbsp. paprika
2 Garlic cloves, crushed (s)
4 Skinless chicken breasts (p)
16 Medium size mushrooms, sliced (s)
300mL Chicken stock
300mL Skimmed milk (< 1Hea/4=1/4 syn per person)
Pack of Schwartz” creamy mild peppercorn sauce” (4.5 syn/4=1.125 syn per person)

Method

Heat a casserole dish, sprayed with frylight, place the chicken breasts in, sprinkle with paprika & pepper, turn over & repeat. Brown the chicken breasts then remove & set aside.
Cook the onions, peppers & garlic until soft, add the mushrooms, and cook for 5 mins. Return the chicken, add stock & dried sage.
Make the sauce as per the package using the milk allowance, when thickened; add to the chicken & mix.
Place the casserole dish, covered into a hot oven for 30 mins at 180C.
Serve as main Sunday meal with roasted veg.

Mustard glazed ham

I make this ham every Christmas and its always a hit, I had the original recipe from Nigella but I know cooking ham in coke has been popular in the USA for many years. I used to use ordinary coke but found it still works well with diet coke.
The only syns are for the mustard glaze and if you want to be really good you can leave it but it is very tasty and only works out a syn or two per portion.
I made this one for my friend (Hi Joy!) and so used unsmoked gammon which she prefers but I usually make it with a smoked gammon joint. It keeps well in the fridge for about seven days.


Ingredients:


Gammon joint, smoked or unsmoked (all fat removed) approx 1.5kg
2 litre bottle diet coke
2 onions (skin on cut in half)
2 tsp grain mustard
1 tbsp brown sugar

Method:

Place the gammon in a large saucepan and add the onions and pour over the diet coke. Bring to a boil and simmer for about three hours.

Take out of the coke and place on a foil covered dish (the glaze can smoke a bit and this makes it easier to clean up)
Mix the mustard and the sugar together and spread over the top of the ham and place in the oven at the hottest setting for 10 minutes until the glaze bubbles.
4 syns for the whole ham or syn free if you don’t use the glaze.

Tasty sausage casserole (slimming world friendly)

I have a bit of a problem with the casserole packet mixes you can buy in supermarkets they are often full of weird E numbers and ingredients you cant pronounce and you can make tasty sauces without the syns and without spending ££ on packets . This recipe makes another family friendly dinner which is both economical and filling too.


Sausages are usually really high in syns but there are some low syn options out there. I’m a big fan of Joes sausages (bought online) which are syn free but for this recipe I used some low syn sausages from a local butchers but there are some good lower syn supermarket ones as well.


Little bit of peeling and chopping to do and then it really looks after itself. I make my sausage casseroles a little differently as I don’t brown the sausages first I think they sort of ‘poach’ in the stock and tomatoes and I think this helps to keep the sausages succulent but if you want to brown yours first please do. I love adding a can of baked beans to this too sometimes and it makes the sauce richer if you want to do this just add near the end of cooking so they don’t go too mushy.


Ingredients:


8 low syn sausages
1/2 pint beef stock (from a cube is fine)
1 can chopped tomatoes
1 tsp dried sage
2 large carrots (peeled and chopped)
1 large onion (peeled and chopped)
4oz mushrooms (sliced)
salt and pepper
spray oil

Method:

Spray a large saucepan with the spray oil and place over a low heat and add the carrots and onion, Sprinkle with salt and cook for about 5 minutes until onion is soft. (The salt helps to soften the vegetables without browning them). Add the sage, sausages, stock, mushrooms and tomatoes.

Bring to the boil then reduce the heat and simmer for about 30 minutes until sauce is reduced and thickened might take a little longer you just want the sauce to be reduced, Season to taste with salt and pepper.

Syns according to the sausages used the rest of the ingredients are syn free,

  • Syns per serving:

    Ingredients

    • Low calorie cooking spray
    • 10 ginger biscuits
    • 3 egg whites*
    • 4 tsp powdered gelatine
    • 450g quark
    • 500g fat free natural fromage frais, plus 4 tbsp, sweetened to taste, to serve
    • 4 tbsp Baileys Irish Cream liqueur
    • 3-4 tbsp sweetener
    • 25g chocolate curls, to decorate (or use grated milk chocolate)

    Method

    1. Preheat the oven to 190°C/170°C Fan/Gas 5.
    2. Spray a 20cm spring clip cake tin with low calorie cooking spray and line with baking parchment.
    3. Put the biscuits in a polythene bag and crush with a rolling pin.
    4. In a bowl, lightly beat 1 egg white, add the biscuit crumbs and mix well. Press evenly over the base of the cake tin and bake for 15 minutes or until firm and golden. Leave to cool.
    5. Dissolve the gelatine in 4 tablespoons of boiling water.
    6. Mix the quark with the fromage frais, liqueur and sweetener. Whisk the remaining egg whites until stiff peaks form, then fold into the quark
      mixture along with the gelatine. Pour on to the biscuit base, smooth the top and chill for 3 hours or until set.
    7. Release the cheesecake from the tin and pile the extra fromage frais into the middle. Crumble over the chocolate curls to decorate and slice to serve.

    Tip: *Pregnant women, the elderly and babies are advised not to eat raw or partially cooked eggs.

    Ingredients


    1 tbsp. sweetener
    1 tbsp. Philadelphia soft cheese/ Cadbury Chocolate flavour (2/4=0.5 syn per portion)
    2 tsp Oetker Gelatine granules (free)
    6 Sainsbury’s “Basic” Rich Tea biscuits (crushed up) (9/4=2.25 syn per portion)
    12cm loose base cake tin
    165g Muller Light fat free yogurt “Mint sprinkled with Dark Chocolate” (ff)



    Method



    In a small food processor, whisk the biscuits until they resemble bread crumbs, then place in a bowl, add just enough hot water to mix together, Place in the cake tin and press down until level, then place in the fridge to chill.
    Place 2tbsp of hot water into a Pyrex dish and add 2tsp of gelatine mix together, if it is getting cold then place in a saucepan with hot water on a low heat, continue until all the gelatine has melted.
    In another bowl mix the Philadelphia, Muller Light & sweetener add the hot gelatine & mix until smooth, tip into the baking ring and place back into the fridge until set.
