A slim friendly breakfast that will give you vitality for starting the day!
Prep Time : 10 minutes
Cook Time : 35 minutes
Ingredients
potatoes – 700g
extra-lean minced pork – 450g
bacon, all visible fat removed – 4 slices
tomatoes, halved – 8
large field mushrooms – 4
Salt and freshly ground black pepper
low calorie cooking spray
large eggs – 4
baked beans – 400g can
Instructions
Place the unpeeled potatoes in boiling water and cook for 30 minutes, or until tender.
Cool, then cover and chill overnight.
Divide the pork mince into 8 portions and shape each into a patty. Place on a grill rack along with the bacon, tomato halves and mushrooms.
Season and grill under a medium heat for 8-10 minutes. Turn the bacon and pork patties and grill for a further 5-7 minutes, until cooked through.
Meanwhile, remove the skins from the potatoes, coarsely grate and season to taste.
Shape into rounds and fry in a pan sprayed with low calorie cooking spray for 5 minutes each side, or until cooked and golden.
Fry the eggs in low calorie cooking spray for 3-4 minutes and heat the baked beans in a small pan.
Serve the hash browns and pork patties with the bacon, tomatoes, mushrooms, egg and beans.
Syn-free + 1 HEA + 1 HEB
Ingredients:
57g wholemeal pitta bread (HEB)
1 clove garlic, cut in half (optional)
4 tablespoons passata with herbs
57g reduced fat mozzarella, or 42g mozzarella/reduced fat cheddar, grated (HEA)
Your choice of toppings e.g. ham, tomato, onion, tuna, sweetcorn, etc. (remember to count syns for any that aren’t free)
Method:
Heat the oven to 220C.
Split the pitta bread into two halves, place on a baking tray and bake in the oven for 2-3 minutes to toast slightly
Rub the cut side of the garlic clove over the pitta bread bases
Spread the passata over the bread, add your toppings and the cheese
Bake in the oven for 10 minutes until the cheese is golden
My topping in the picture above: tuna, onion, tomato, capers, anchovies (0.5 syns for 28g on Original)
Deduct 6 Syns if using Cheddar reduced fat/light as a Healthy Extra.

Ingredients;
Grated rind and juice of 2 lemons
8 level tbsp canderel
3 eggs separated
2 tbsp hot water
1 sachet gelatine
6oz very low fat fromage frais
1 egg white
pinch of salt OR cream of tartar
Method;
1. Put grated lemon rind and juice in a bowl with canderel and egg yolks.
Stand over a saucepan of simmering water and whisk until lemon in colour
(10- 15 minutes)
2. Pour hot water into a basin and sprinkle over gelatine – stand in a
saucepan of simmmering water until gelatine has dissolved.
3. Stir dissolved gelatine into lemon custard mix and leave until beginning to
set. Fold the fromage frais into the setting lemon mixture .
4. Whisk the 4 egg whites with the salt or cream of tartar until peaking and
fold the setting lemon mixture in with a metal spoon.
5. Pour into a mousse dish and refridgerate for 2 – 3 hours.
There you go – free lemon mousse – perfect for dinner parties or scoffing on
your own!
fluffy chocolate mousse
serves 6 syns per serving 1
ingredients:
1 sachet gelatine
511g/1lb 2oz very low fat natural fromage frais
3 sachets cadbury highlights hot chocolate drink
4 level tbsp artificial sweetener
2 egg whites
method
sprinkle the gelatine into a bowl containing 100ml/3½fl oz of very hot water and stir well until dissolved. place the fromage frais in a large bowl and add the hot chocolate drink, mix well until dissolved. mix in the cooled gelatine. whisk the egg whites until they stand in stiff peaks, and then fold into the chocolate mixture. pour into dishes and chill well until set. * pregnant women, children and the elderly should not eat raw eggs
i made this today ands its lovely! i sprinkled a crushed funsize pack of maltesers (19.5g) over it too which really hit the spot for an extra 5 syns.
