Tangy lemon and raspberry summer pudding

Ingredients:

2 eggs
1 mandarin flavour mullerlight yogurt
juice of half a lemon (this was a very juicy lemon- I was planning on using a whole one, but it would have been too much)
3 tbsp sweetener
1/2 tsp baking powder
4oz couscous
hot water from the kettle
Frylite spray
For the topping
1 tub quark (0% fat soft cheese)
lemon juice and sweetner to taste
frozen or fresh raspberries

Method

Pre-heat oven to 180 degrees (or you can cook in microwave)
Put couscous in a bowl, cover with hot water (a couple of mm over the top of the couscous). Cover the bowl and leave for 10 min
In another bowl, beat the eggs and add the yogurt, lemon juice and sweetner
Add the yogurt mixture to the puffed up couscous and mix well.
Spray frylite to coat a pudding basin
Add your mix to the basin
Cook in the oven for 20-25 min, or 6-8 min in microwave. Test with a knife to check it comes out clean.
Turn out onto a plate to cool slightly
For topping
Mix quark, sweetner and lemon juice to taste.
Spoon over the slightly cooled cake and then decorate with raspberries. I used frozen berries, on the cake and after being in the fridge for half an hour they had defrosted.
Chill in the fridge
Serve and enjoy!
The inside texture of this is a bit more rubbery than cake- and I made it very citrus-y- which, with the sharpness of the raspberry makes it more like summer pudding than a sponge… and VERY yummy

Slimming world 6 syn chocolate roulade

5 eggs (separated)
40 g reduced fat cocoa (6 syns) (other cocoa may be different syns)
5-6 heaped dessertspoons of sweetener (sucralose ones are best for cooking with)

whisk up the egg whites to stiff peaks

in another bowl whisk the cocoa with yolks and sweetener
carefully fold the choc mix into the egg whites (with a metal spoon)(helps keep air in)

bake in a lined roulade tin that’s been sprayed with frylite for around 20 min at 150 or until springy to touch

for the filling I mixed a tub of quark with a cherry 0% fat activea and sweetener spread it on and sprinkled defrosted frozen cherries on

IT TASTED LIKE BLACK FOREST GATEAUX

Or you can use different filling or substitute the cocoa for flour (don’t forget to syn it) and add vanilla essence for a vanilla sponge

I made a choc roulade and filled with coconut flavoured quark and chopped peaches the other day so many combinations

SW Quiche (savoury slice)

Bacon (as much as you like, chopped)
large tub VLF Cottage cheese
4 Eggs

Dry fry bacon
beat eggs, add the cottage cheese (looks disgusting but ignore that)
add the bacon and mix. Pop in an oven proof dish and cook for 30 mins or so on 200 until it’s golden brown. Eat hot or cold with a big salad.

 

pizza topped chicken (slimming world recipe)

This Italian-inspired dish gives you all the taste of cheesy pizza, for Free! Using chicken or turkey as a base saves on doughy Syns and provides a real deep-pan meat feast!

ingredients

½ small red onion, chopped
½ red pepper, chopped
1 small clove of garlic, crushed
1 tbsp stock
2 vine tomatoes, skinned and chopped
1 tbsp tinned tomatoes
1 tsp tomato puree
1 tsp oregano
1 chicken fillet
Low calorie cooking spray
40g low fat hard cheese, grated
1 cherry tomato, halved
Fresh basil, roughly chopped

method

Place the onion, pepper and garlic in a small saucepan with the stock and simmer for a few minutes.
Add the vine tomatoes to the pan, then the tinned tomatoes, tomato purée and oregano. Cut the chicken fillet in half horizontally, being careful not to cut it the whole way through. Fold open to make a butterfly shape. Spray a non-stick frying pan lightly with low calorie cooking spray then fry the chicken to give colour on both sides. Place the chicken on a baking tray and place in the oven, 220ºC/200°C Fan/Gas 7 for 15-20 minutes.
When cooked, place the tomato mixture on top of the chicken. Add the cheese and sprinkle with basil. Place the cherry tomato on the top, then put back in the oven for 5 minutes.
Tip: Serve with a huge crispy salad, a jacket potato or roasted vegetables.

Syn Free Metabolism Boosting Chilli Speed Soup

If you have been on Slimming World for a while, no doubt you have heard all about tomato speed soup, the soup that resembles Heinz tomato soup and if you haven’t been on Slimming World for long, no doubt you will see it soon. If you want to find out about it now, just search the internet for ‘Slimming World Speed Tomato Soup’ and you’ll find lots of links to take a look at!
So not only does this version contains the majority of the speed food ingredients in the original recipe but it also contains chilli and spices like chilli are thought to raise metabolism by up to 50 percent for up to three hours after eating, due to increasing your heart rate! Can’t be bad!

Metabolism Boosting Chilli Speed Soup
Syn free EE and EE SP
Makes 2 big bowl fulls!

Ingredients

1 carton of pasatta
1 tin of carrots, drained
1 tin of baked beans
1 chicken stock cube
1 pint of water
1/4 teaspoon garlic salt or garlic powder
1/4 teaspoon of chilli powder
1 teaspoon of cumin powder
1 teaspoon of dried oregano

Method

Place all ingredients in a heavy bottomed pan – don’t worry if at this stage it looks pretty disgusting, lol – take a hand blender and blend all the ingredients together until smooth and thick. Heat as much as is required.
It really is very tasty, even my two year old quite likes it when she’s in the mood, lol!

 

BBQ Chicken Wraps – Perfect for Lunchtimes & Syn Free

These BBQ chicken wraps are perfect for lunch, I always struggle with what to have for lunches so these I just had to try.
They are also Syn free if you use the cheese for your HEA choice and the wraps for your HEB choice on extra easy or original plans.
I finally got hold of Bfree wraps as they took a bit of finding:-) and for me the wraps are better tasting than normal wraps when gridded.
It was a very enjoyable lunch that I will certainly have again. Next time though I will make the honey BBQ sauce here to go in them and maybe use a few Syns as they would be super delicious with that as the Schwartz BBQ chicken spice blend is nice but sauce would be amazeballs

Ingredients

2 chicken breasts, sliced
4 Bfree wraps
100g cheddar cheese, grated
½ red pepper, de-seeded and thinly sliced
½ yellow pepper, de-seeded and thinly sliced
½ green pepper, de-seeded and thinly sliced
½ onion, chopped
1 clove garlic, crushed
Frylight
1 tbsp Schwartz BBQ chicken spice blend

Instructions

In a pan sprayed with frylight cook the chicken, & peppers for about 7-8 minutes
Add 2 tbsp of water if it seems to dry after 4-5 minutes.
Add the garlic and BBQ spice blend and cook for another 2-3 minutes.

Making the wraps:
Spoon some of the cooked chicken mixture into the middle of the wrap

Spread the mix to form a line.
Add 25g of the cheese.
Using both hands, fold a piece either side then roll up.
Repeat this with the other 3 wraps.

In a clean griddle/frying pan sprayed with frylight
On a medium to high heat place the rolled up wraps in and cook for 1-2 minutes on each side.

Serve with crisp salad

Slimming world Five Spice Chicken

2 chicken breasts – chopped
1 bag stir fry veg
Any extra veg you want to add
4 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp sweet chilli sauce (1.5 syns)
2 tsp garlic granules
1 tsp Chinese five spice
2 portions dried noodles

In a bowl, mix the chopped chicken together with the light soy sauce, garlic, sweet chilli and the five spice.

Heat a large wok or pan with frylite, then cook the chicken mixture until coloured.

Add in all the veg, and the dark soy sauce. Stir fry until veg crunchy but cooked through.

Serve with the cooked noodles.

1.5 syns for all

Slimming world Bacon, Egg & Vege Loaf

(Makes 1 small loaf)
6 eggs (whisked)
Small tub of very low fat cottage cheese
40g reduced fat grated cheese (HEA)
1 Courgette grated
1 carrot grated
1 garlic clove crushed
4 slices rindless bacon all visible fat removed and chopped
1/2 red onion chopped

Mix all ingredients together in bread Tin and bake on 180 in oven for 25 minutes!

Bacon Souffle – TASTY

Light and fluffy with a delicious cheese-filled center.

Prep Time : 20 minutes
Cook Time : 20 minutes

Ingredients

Low calorie cooking spray
lean bacon, all visible fat removed, cut into 1.5cm pieces – 100g
red chilli, deseeded and finely chopped – 1
spring onions, finely chopped – 8
eggs, separated – 6
finely chopped fresh chives and dill – 6 tbsp each
Parmesan cheese, finely grated – 100g
English mustard powder – 1/4 tsp
Salt and freshly ground black pepper
Mixed salad leaves, to serve

Instructions

Preheat the oven to 180°C/160°C Fan/Gas 4.
Prepare a bain-marie by placing a roasting pan one-third full of warm water into the oven.
Lightly spray the insides of six individual ramekins or one medium soufflé dish with low calorie cooking spray.
Spray a frying pan with low calorie cooking spray and stir-fry the bacon, red chilli and spring onions for 6-8 minutes, then drain thoroughly in a metal sieve to get rid of any excess moisture and pat dry with kitchen paper.
Meanwhile put the egg whites into a bowl and whisk until just stiff.
In a separate bowl, beat the egg yolks and add the bacon and spring onion mixture, chopped herbs and three-quarters of the cheese.
Season with the mustard powder and some salt and pepper.
Using a metal spoon, fold the egg whites into the egg yolk and bacon mixture.
Spoon this into the ramekins, almost to the top, and sprinkle over the remaining cheese.
Place in the bain-marie and cook for around 20 minutes until risen and lightly set.
Serve with a few mixed salad leaves.

Slimming world Omlette Wraps

Packed with colorful peppers.

Ingredients

red pepper, halved, deseeded and finely sliced – 1
yellow pepper, halved, deseeded and finely sliced – 1
shallots, halved and finely sliced – 3
garlic cloves, crushed – 2
ground cumin – 1 tsp
Small handful of roughly chopped fresh coriander
eggs – 6
red chilli, deseeded and finely chopped – 1/2
Lime wedges, to serve

Instructions

Spray a non-stick pan with low calorie cooking spray and place over a medium-high heat.
Add the peppers, shallots, garlic and cumin and stir-fry for 4-5 minutes then put the mixture into a bowl and scatter over the coriander.
Wipe the pan with kitchen paper and spray with low calorie cooking spray.
Lightly beat the eggs in a large measuring jug and stir in the chilli.
Pour one-quarter of the egg mixture into the pan and tilt it around.
Cook for 1½ minutes on each side or until the edges turn golden then loosen with a palette knife and slide on to greaseproof paper.
Repeat to make three more omlettes.
Spoon the vegetables on to the omlettes and roll them up.
Enjoy cold or thoroughly reheated, with lime wedges to squeeze over.
