Slimming world Beef Stew

Easy dinner to prepare when you want some beef stew.

Cook Time : 01h 30min

Ingredients

shallots – 12
Low calorie cooking spray
carrots – 2
braising steak, all visible fat removed – 380g
tomato purée – 1 level tbsp
bouquet garni – 1
closed cap mushrooms – 170g
onion gravy granules – 2 level tsp
Salt and freshly ground black pepper
Freshly chopped parsley, to garnish

Instructions

Peel the shallots.
Heat a large pan sprayed with low calorie cooking spray, add the shallots and fry for 5 minutes until browned.
Transfer to a plate and set aside.
Slice the carrots, place in the pan with the steak, tomato purée, bouquet garni and 800ml pints water.
Cover and simmer for 1½ hours.

Season to taste, sprinkle with parsley and serve

 

Potato and Vegetable Tortilla

This tastes just as good from the fridge as it does warm

Cook Time : 40 minutes

Ingredients

potatoes, peeled and cut into bite-sized pieces – 400g
spring greens, finely shredded – 110g
fresh or frozen peas – 110g
asparagus tips, roughly chopped – 200g
Low calorie cooking spray
shallots, finely chopped – 3
large British Lion eggs, lightly beaten – 8
A handful of fresh mint leaves, finely chopped
Salt and freshly ground black pepper
reduced-fat mozzarella cheese, finely diced – 60g

Instructions

Boil the potatoes in a large pan for 10 minutes.
Add the spring greens, peas and asparagus and boil for a further 4-5 minutes.
Drain thoroughly and set aside until needed.
Heat a non-stick frying pan sprayed with low calorie cooking spray over a medium heat.
Add the shallots and stir-fry for 5 minutes.
Add the potatoes, vegetables, eggs and mint.
Season well.
Reduce to a low heat and cook for a further 8-10 minutes.
Remove the pan from the heat and scatter over the mozzarella.
Brown the top of the tortilla under a grill for 3-4 minutes, then allow to cool slightly.
Turn the tortilla out onto a serving plate.
Cut into wedges and serve warm with a large mixed salad.

Slimming World’s red pepper, spinach and sweet potato tortilla is a great option for a light, meat-free, meal. Serve with a fresh green salad for more of your 5-a-day

Ingredients

1 medium red onion, peeled and thinly sliced
2 small sweet potatoes, peeled, halved and sliced into thin half moons
1 red pepper, deseeded and sliced
1 tsp dried rosemary
1 garlic clove, peeled and crushed
4 large eggs
57g/2oz baby spinach
salt and freshly ground black pepper
low calorie cooking spray
2 rounded tbsp quark
2 little gem lettuce, leaves separated
2 large tomatoes, sliced
1 medium carrot, peeled and grated
¼ cucumber, thinly sliced

Method

Preheat the oven to 200°C/Gas 6.
Mix the red onion, sweet potato and red pepper together and place on a roasting tin lined with baking parchment. Roast the vegetables for 20-25 minutes, until they’re tender. Five minutes before the end of the cooking time, add the rosemary and garlic and mix well. Remove the vegetables from the oven and reduce the temperature to 180°C/Gas 4.
In a large bowl, whisk the eggs then add the roasted vegetables and the spinach and mix together well. Season to taste.
Preheat an 18cm-20cm/7-8 inch diameter non-stick, ovenproof frying pan on the hob. Once hot, spray the pan with low calorie cooking spray.

Pour in the eggs and roasted vegetables and then dollop the quark in small spoonfuls over the top. Let the tortilla set slightly on the hob for 1 minute, transfer to the oven and cook for 20 minutes, until set.
Remove from the oven and leave to cool. Serve with the lettuce, tomatoes, carrot and cucumber.

Tray Baked Seasoned Chicken & Wedges – Syn Free

Syn Free on extra easy & original if using HEB for wedges

Ingredients

4 large baking potatoes, scrubbed and cut into wedges
Salt and freshly ground black pepper
3 garlic cloves, finely chopped
2 tbsp of schwartz chicken hearb and spice blend
4 chicken breasts, all visible fat removed
4 red onions, quartered
1 red and 1 yellow pepper, deseeded and cut into chunks
8 small tomatoes
Low calorie cooking spray
A small hand full of finely chopped coriander.

Instructions

Preheat oven 200ºc gas mark 7.
Boil the wedges for 5-6 minutes.
Drain well then return to the pan and leave to stream dry for 30 seconds.
Spray a baking tray with frylight and arrange the wedges on the tray in a single layer.
Season well.
Rub the garlic and chicken herb and spice into the chicken.
Put in a shallow oven dish and arrange the onions, peppers and tomatoes around it.
Spray the chicken, veg and wedges with frylight and bake for 25-30 minutes
Until chicken is cooked through and the wedges are golden.
When served top with the coriander or parsley.

American style breakfast pancakes

For the pancakes:
28g ready brek
50ml semi skimmed milk
1 egg
1/2 tsp baking powder
2 dessert spoons of cold water

Method:

Measure 28g Ready brek into a bowl and add 1/2 teaspoon of baking powder. Mix thoroughly
Beat an egg and add it to the milk
Add the milk and beaten egg to the ready break and mix well.
Add the water if it looks too thick

The mixture should be slightly thicker consistency than normal pancake batter (the lack of flour makes it a bit more delicate)
Spray a frying pan with frylight
Fry the pancakes on both sides in small rounds. you may need to spread the mix a bit in the pan as it wont flow as well as normal batter. Cook until they puff up and are firm and bouncy to the touch.
The mix should make 3 small pancakes perfect for stacking!
Toppings
I have tried these with chopped banana, raspberry, yogurt and today with chopped apple, quark and cinnamon. Basically- anything goes. I often add 1tsp of maple syrup, which is just one syn and totally worth it! If you wanted to go all american, you could add lean bacon to the side.

Full English Brunch Bake

Combining all the best ingredients of a traditional English breakfast in one pan, this wholesome, hearty, rustic dish is great for entertaining and it will save on time as well as washing-up!

Ingredients

Desirée potatoes, peeled and cut into 1.5cm cubes – 300g
Low calorie cooking spray
lean bacon rashers, all visible fat removed, cut into 2cm pieces – 100g
Sainsbury’s Be Good to Yourself Extra Lean Cumberland Sausages, each chopped into 3 pieces – 4

onion, peeled and sliced into thick rings – 1
button mushrooms, halved – 200g
large eggs, lightly beaten – 8
very finely chopped fresh parsley – 6 tbsp
salt and freshly ground black pepper
midi plum tomatoes, halved or quartered – 200g
reduced fat Cheddar cheese, grated – 25g

Instructions

Place the potatoes in a large saucepan of lightly salted boiling water and cook for 10-12 minutes or until just tender.
Drain well and set aside.
Meanwhile spray a large frying pan with low calorie cooking spray and place over a high heat. Add the bacon, sausages, onion rings and mushrooms and stir-fry for 6-8 minutes or until lightly browned.
Add the potatoes to the mixture and stir to mix well.

Whisk the eggs with the chopped parsley and season well.
Pour this over the potato mixture, scatter over the tomatoes and cook over a gentle heat for 8-10 minutes or until the base is set.
Sprinkle over the cheese and place under a preheated hot grill for 4-5 minutes or until lightly golden and set.
Cut into thick wedges and serve.

Slimming World’s Quorn cottage pie

Ingredients

Low calorie cooking spray
2 large onions, chopped
2 celery sticks, trimmed and finely chopped
2 large carrots, peeled and diced
500g Quorn mince
400g can chopped tomatoes with garlic and herbs
1tbsp Worcestershire sauce (optional)
300ml hot vegetable stock
Salt and freshly ground black pepper
415g can baked beans
750g new potatoes, unpeeled and scrubbed

Method

Preheat the oven to 200°C/Fan 180°C/Gas 6.
Spray a large, deep frying pan with low calorie cooking spray. Add the onions, celery and carrots and stir-fry for 4-5 minutes. Stir in the Quorn, tomatoes, Worcestershire sauce (if using) and stock. Bring to the boil, cover and simmer for 20 minutes. Season to taste and stir in the baked beans.
Meanwhile, cook the potatoes in a pan of lightly salted boiling water for 15 minutes until tender. Drain well and roughly crush with the back of a fork.
Tip the Quorn mince mixture into a large ovenproof dish, spoon over the potatoes to cover and bake for 20-25 minutes until golden.
Serve hot with vegetables of your choice.

Big Mac In A Bowl – 2 Syns on Slimming World Extra Easy

One of my favourite things before I began Slimming World, I have to admit was Macdonalds until I found out a Big Mac will set you back about 25 Syns (nearly double your daily allowance) ooops not the sort of thing you want to be eating really although they taste soo good 🙂

So I began looking for healthier alternatives and I came across a little recipe in a Facebook group called Big Mac in a Bowl. I was like really?? I must try this and I can tell you I was not disappointed. It really does taste and smell like the real thing minus the bread and is a must try for anyone who loves junk food. The only thing you need to Syn is the thousand island dressing which is fantastic so go on give Big Mac in a Bowl a try

Only 2 Syns on Extra Easy Plan

Ingredients

200g of extra lean minced beef (ensure it is extra lean otherwise it isn’t free)
Chopped onion
Pickled gherkin, sliced – I don’t like these though so I left it out
Shredded iceburg lettuce
4 tbsp of kraft light thousand island dressing (2 Syns)
Sliced tomato – I added this as I love tomatoes
3 mini babybel light cheeses – sliced

Instructions

Add the onions and mince to a frying pan
Fry with fry light until brown and cooked through
Layer the bottom of a bowl with shredded lettuce & some gerkin & tomato
Then add over the top half of your mince and onions
Add half the slices of babybel on top
Then add another layer of lettuce, gerkin & tomato
Add the rest of the mince/onion on top
Place other half of babybel slices on top
Enjoy!

Slimming World’s pear and rhubarb crumble

Slimming World’s pear and rhubarb crumble is a delicious guilt-free dessert that can be rustled up in no time. The perfect Sunday treat that can be enjoyed with a naughty drizzle of custard. This pud can be cooked in just 30 mins which makes it a rather speedy dessert.

Ingredients

2lb/908g rhubarb, cut into 2in/5cm pieces
11oz/312g pears, peeled, cored and sliced
Juice of 1 orange, plus 1 tsp finely grated zest
6 tbsp artificial sweetener
1 tsp ground cinnamon
For the topping:
1oz/28g low-fat spread
2 tbsp artificial sweetener
2oz/57g plain flou

Method

Preheat your oven to 180C/350F/Gas 4. Place the rhubarb in a medium-size pie or glass dish. Add the pear slices, orange juice and zest, and toss together to combine. Sprinkle over the sweetener and cinnamon, and cook in the oven for 10-12 minutes.
Meanwhile, make the topping by placing the low-fat spread, sweetener and flour in a bowl. and rubbing together with your fingertips until the mixture resembles breadcrumbs.
Remove the fruit from the oven. Sprinkle over the topping and cook for a further 10-12 minutes or until lightly golden. Allow to cool slightly before serving – its tastes great with a dollop of low-fat, ready-made custard), served warm or cold.

Slimming World’s tomato, lentil and vegetable soup makes a filling chunky soup made with curry spices and ginger. It’s so easy to make, ready in just 30 minutes

Ingredients

low calorie cooking spray
1 onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
2cm piece root ginger, peeled and finely grated
2 celery sticks, finely chopped
1 large potato, peeled and cut into 1.5cm dice
1 large carrot, peeled and cut into 1.5cm dice
600ml boiling hot vegetable stock
1 tbsp mild curry powder
125g dried red lentils, rinsed and drained
600ml passata
freshly chopped coriander, to serve

Method

Spray a large saucepan with low calorie cooking spray and place over a high heat. Add the onion, garlic, ginger, celery, potato and carrot and stir-fry for 1-2 minutes.
Add the remaining ingredients, except the seasoning, and bring to the boil. Cover and simmer gently for 15-20 minutes or until the lentils are cooked. Season well and serve sprinkled with coriander
