slimming world sausage casserole

A hearty dish of pork and leek sausages, sweet potatoes and mushrooms in a deliciously comforting onion gravy.

ingredients

  •     low calorie cooking spray
  •     3 large onions, sliced
  •     1 large garlic clove, crushed
  •     200g closed-cup mushrooms, sliced
  •     2 large carrots, peeled and roughly chopped
  •     1 1/2 tbsp tomato purée
  •     1 tsp Marmite
  •     1/2 tsp dried thyme
  •     2 vegetable stock cubes, crumbled
  •     12 Slimming World Syn-free Pork & Leek Sausages
  •     1 large sweet potato, peeled and roughly chopped
  •     salt and freshly ground black pepper
method

Spray a deep non-stick frying pan with low calorie cooking spray and place over a high heat. Add the onions and stir-fry for 5 minutes or until slightly caramelised, adding a little water if they start to stick.

Put half of the fried onion in a food processor with the garlic and 100ml water and whizz until finely chopped. Return the puréed onions to the pan and add the mushrooms, carrots, tomato purée, Marmite, thyme, stock cubes and 500ml boiling water. Reduce the heat to medium and simmer for 10 minutes.

Meanwhile, cook the sausages according to the pack instructions. Cut each sausage into 5 pieces and keep warm.

Stir the sweet potato into the casserole and cook for a further 20 minutes, adding the sausage pieces 5 minutes before the end. Season to taste and serve hot. Enjoy!

Tangy, tasty and completely Free, this sauce goes great with beef burgers, succulent pork or even to make a Hunter’s chicken dish.

ingredients

  •     Low calorie cooking spray
  •     1 onion, peeled and roughly chopped
  •     1 tsp mild chilli powder
  •     225g passata
  •     3 tbsp sweetener
  •     4 tbsp balsamic vinegar
  •     1 tbsp Worcestershire sauce
  •     ½ tsp mustard powder

method

Spray a pan with low calorie cooking spray and sauté the onion and chilli powder over a high heat for 5 minutes until softened.

Stir in the remaining ingredients, bring to the boil and simmer for 10 minutes, until thickened. Check the seasoning before serving hot or cold.

SLIMMING WORLD VERSION OF SCONES, CREAM & JAM 1/2 syn!

Hi all so here it is!!!! OMG they are amazing!!!!!!

You’ll need

35g oats HEB

1 egg

2 tbsp stevia or sweetener

A few drops of flavouring, I used jam roly poly from cupcake world & 50ml of skimmed milk. HEA

Then for the cream

Quark Stevia & any flavouring ie vanilla or add sugar free squash or the protein world strawberry syrup.

Then for the jam I used the zero syrup, you could syn some squeeze sugar free jam instead.

The zero syrups are 1/2 syn for 4 tbs and I used less that that for the whole thing from protein works.

**Chocolate orange cake 1/2 HEB & 1/2 syn on Slimming World**

I love these wheat bran cakes!!! I’ve done loads of different ones now. This was lovely. Super quick, easy and filling. You can choose to add sweetener if you want to, that’s 1/2 syn per tbs. I prefer not to. Choose what milk you want and choose what’s flavour you fancy.

Chicken Chow Mein

Whenever I go to a Chinese restaurant I always fill up on chicken chow mein, noodles anything like that because it’s my favourite and no shop makes a pre-made chicken chow mein the same, so I literally only have it when I go to a Chinese. I saw on the Slimming World app this recipe and of course I had to give it a go, my word it was delicious.

Information:
Serves 4 People.
Preparation time: 15minutes.
Cooking time: 30-40minutes.
Syns per serving: FREE

Ingredients:

♥ 8tbsp light soy sauce
♥ 4 garlic cloves (crushed)
♥ 1tsp of Chinese 5 Spice powder
♥ 3 skinless chicken breasts (sliced)
♥ 397g dried egg noodles
♥ large bag of mixed stir fry veg
♥ 8 spring onions (sliced diagonally)
♥ 2 tbsp dark soy sauce
♥ FryLight

How to cook Chicken Chow Mein:

1) Mix the light soy sauce, garlic, 5 spice powder in a bowl, add the chicken, toss to coat evenly and then set aside to marinate for 20minutes.

2) Meanwhile, cook the noodles according to the packets instructions, then drain. Spray a large frying pan or wok with fry light, add the chicken, then stir fry on a high heat for 4-5 minutes.

3) Add the vegetables and spring onion, stir fry together for another 4 – 5minutes. At this point, I added some more soy sauce and Chinese spice to get the flavours around all the ingredients.

5) Add the noodles and dark soy sauce (and more spice if you fancy, I did) toss together, stir fry for a extra few minutes to let all the flavours combine together.

6) Serve in warmed bowls. You could serve this with other things, such as lemon chicken, chicken skewers, rice or anything else, but I just had it by itself.

Slimming World’s Mexican chilli chicken cups

These flavoursome Mexican chilli chicken cups by Slimming World are really simple to make and ideal if you fancy something different for dinner. The chicken mixture is spiced with cumin, paprika and red chillies. Serve your cups with rice or quinoa.

Ingredients

low calorie cooking spray
2 garlic cloves, finely chopped
1 red onion, halved and thinly sliced
1 large red pepper, deseeded and thinly sliced
1 red chilli, deseeded and finely chopped
1tsp ground cumin
1tsp paprika
4tbsp canned chopped tomatoes

4tbsp tomato purée
4 cooked skinless and boneless chicken breasts, diced
small handful chopped fresh flatleaf parsley, to garnish
8 large iceberg lettuce leaves
lime wedges, to serve

Method

Heat a large non-stick frying pan and spray with low calorie cooking spray.
Add the garlic, onion, red pepper, chilli, cumin, paprika, chopped tomatoes, tomato purée and chicken and stir-fry for 6 minutes or until the mixture is hot and the vegetables are just tender.

Season well and scatter over the parsley.
Spoon the chicken mixture into the lettuce leaves, fold them over to enclose the filling and serve with lime wedges and boiled rice.

Fajita Chicken and Wedges – syn free if using cheese as HEA

Now this is what we had for tea last night. It was my birthday so I wanted to try and make something a little indulgent but still totally free. I saved up my Healthy A choice so that I could pop it on top of whatever I made, because to me something indulgent is usually topped with cheese! So I put together this amazing recipe, and I’m not exaggerating here, it was so good my husband asked me if we could have it again the following day and said that he couldn’t believe it was a syn free meal!

Fajita Chicken and Wedges
Syn free on EE if using the cheese as your Healthy Extra A choice
(add 6 syns per serving if not using cheese as your A choice)
Serves 2

Ingredients

• 2 large or 3 medium Maris Piper potatoes, cut into wedges
• Low cal cooking spray
• Salt and black pepper
• 2 Chicken breasts, all visible fat removed and cut into strips
• Half a large onion, sliced
• Half of a red, yellow and green pepper, cut into strips
• 3/4 carton of passata

• 1 tsp of cumin
• 2 tsp of fajita seasoning (the Schwartz fajita seasoning is syn free!)
• Half a level tsp of smoked paprika
• 80g of reduced fat mature cheese (2xHEA)
• 125g Butter Beans (drained weight)

Method

Put wedges on a non stick baking tray, spray with low cal spray and season well. Bake in a very hot oven on the top shelf (GM9, 475F, 240C) for 15 minutes, then turn, spray again and bake for another 15 minutes until golden.
Meanwhile spray a ceramic pan (or a frying pan) with low cal spray, add the chicken and onion to the pan over a medium heat. Cook until the onion is translucent, then add the peppers and cook until the chicken is browned. Stir in the passata, butter beans, cumin, fajita seasoning, paprika and a few twists of black pepper. Allow to simmer for 10-15 minutes.
If you have used a ceramic pan that can be transferred into the oven, tip your wedges on top of the chicken, pressing some of them into the sauce. If you have used a frying pan, transfer the chicken and sauce into an oven proof dish, then tip your wedges onto the top, pressing some of them into the sauce. Sprinkle over the cheese and pop back into the oven, turn the oven down a bit (GM6, 400F, 200C) and bake for 10 minutes until the cheese has melted. Divide between two plates and serve.
