Slimming World’s chicken pappardelle

One of the easiest things you can do with chicken breasts is to create a nice bowl of chicken pasta. This chicken pappardelle from Slimming World is one of our favourites but we’ve got lots more chicken pasta recipes here for you to choose from.

Ingredients

Low calorie cooking spray
1 red onion, peeled, halved and thinly sliced
1 carrot, peeled and finely diced
2 celery sticks, finely diced
2 garlic cloves, peeled and crushed
4 skinless chicken breast fillets, cut into 2cm pieces
100ml chicken stock
400g plum tomatoes, roughly chopped
4 tbsp chopped fresh flat-leaf parsley
350g dried pappardelle
150g rocket leaves, roughly chopped
Salt and freshly ground black pepper

Method

Spray a saucepan with low calorie cooking spray. Add the onion, carrot, celery and garlic and stir-fry gently for 2-3 minutes.
Add the chicken and stir-fry over a medium-high heat until lightly coloured. Reduce the heat slightly and stir in the stock and tomatoes.
Cover the saucepan and cook, stirring occasionally, for 8-10 minutes or until the tomatoes have become very soft and the chicken is cooked through. Stir in the parsley.
Meanwhile cook the pasta according to the packet instructions until tender al dente (tender but still retaining a bite). Drain well and transfer to a serving bowl.
Stir the rocket into the sauce and season to taste.
Spoon the sauce over the pasta and toss gently to combine thoroughly and serve immediately.

Gorgeous Lamb, chickpea & spinach curry

This is a recipe I found on my fave, the BBC Good Food, website and I haven’t made it in a while. When I was following WW the lamb was too high in points for me to consider using it. I have now checked the values on the Slimming World website and I can’t wait to make this. Soooo tasty and very low in syns too. I have changed the recipe slightly from what it was on the website, to make it a bit more Slimming World friendly but you can find the original recipe here.

Serves – 4
Syns – Free on EE

Ingredients:

500g lean lamb stewing cubes
1 red onion , sliced into half moons
1 cm piece ginger , peeled and finely chopped
2 garlic cloves , crushed
1 tbsp ground cumin
1 tbsp ground coriander
2 tsp chilli powder – or more if you like it really hot 😉
400g can tomatoes
Splash of concentrated beef stock, about a tsp or less
200g can chickpeas , washed and drained
1 tsp garam masala
100g spinach , roughly chopped

Method:

Spray a pan with frylight, cook the lamb until browned all over for about 10 mins, then remove from the pan.
Cook the onion in the same pan until golden brown, about 5 mins. Stir through the ginger, garlic, cumin and coriander, then cook for 2 mins more until you smell the spices.
Return the lamb to the pan, pour over the tomatoes, bring to the boil, then leave to simmer over a gentle heat for 11⁄2 hrs until the meat is really tender.
Top up with a little boiling water if the sauce becomes too dry. Add in the chickpeas and garam masala, then simmer for 5 mins more. Stir through spinach and cook until wilted slightly then season to taste.
The recipe says to serve it with masala mash, which you can do just remember to syn it accordingly. I would definately recommend having it with mash or rice or even Slimming World chips. Think this is definately going to be dinner on Sunday

Gok Wan fu yung (slimming world friendly)

I recently bought Gok Wans new cook book called ‘Goks Wok’ and there are so many recipes in it I want to try and I think loads can be slightly adapted to make them slimming world friendly and this is one of them so keep an eye on the blog in the new upcoming weeks I’ll be posting all the recipes I try on here.

I made this for my lunch today and it was really tasty, I did use more peas than the recipe but will post the original recipe here. I think this makes a great store cupboard/fridge quick lunch or dinner even if you served it with a nice big side salad.

Goks Fu Yung

2 eggs
1 tsp soy sauce
1/2 onion peeled and finely chopped (or a spring onion would be ok too)
2 seafood sticks (cut in half)
75g frozen peas
white pepper
spray oil

Crack the eggs into a bowl and whisk together with the soy sauce and a pinch of the white pepper.

Spray a wok or frying pan with spray oil and heat up then add the onion and stir fry for a few minutes then add the peas and seafood sticks and stir fry for another few minutes.

Add the beaten eggs and leave for alittle while so it starts to set then stir everything gently until it all looks cooked through.

Slimming World’s chicken soup

Hearty and warming, Slimming World’s chicken soup is really simple to make. Packed full of flavours, this is comfort food at its best. It’s a guilt-free lunch or light dinner that takes under an hour to rustle up. Serve with crusty bread.

Ingredients

25g margarine, such as Flora Light
1 large white onion, peeled and chopped
25g plain flour
900ml chicken stock
1 leek, trimmed and chopped
¼ cabbage, chopped
½ small cauliflower, chopped
250g potatoes, peeled and chopped
100ml skimmed milk
225g cooked skinless and boneless chicken breast, chopped
chopped fresh chives, to garnish

Method

Melt the margarine in a saucepan then stir in the onions. Add the flour and gradually pour in the stock.
Add the vegetables and simmer for 30 minutes until cooked through.
Place the soup in a blender or food processor and blend until smooth, then pass through a fine sieve.
Season to taste, then add the milk and chopped chicken.
Warm for 10 minutes to heat through and serve sprinkled with chives.

OMG guys this was amazing!!!!

You are allowed to spilt your healthy extras 50/50. I’m a senior consultant, so please know this is correct information.

It’s only half a syn and a HEB and a bit of your HEA.

JUST STUNNING!!!

Play around with flavours. Sticky toffee pudding would be easy, just add some toffee flavouring, coconut choc shot, orange essence, coffee?! The opportunities are endless!!

Your amount you get of the prunes for a HEB vary, so please check the ones you buy. Whitworths are 80g so I love them !! The wheat bran is 60g as a b choice, you only need 30g for this.

Where I say mix together, I used a food processor so the prunes go a bit more like a paste. Use a mug, cup or bowl.

Only takes 4 minutes in a microwave.

Serve with speedy berries and quark.

Gooey salted caramel cake SYN FREE ON SLIMMING WORLD

This was a new experiment today and I loved it!!!

It’s a HEB and a little part of your HEA.

If you add syrups or choc shot syn it accordingly

You’ll need

2 weetabix

3 tbs stevia or sweetener

1 egg

Salted caramel flavouring (lemon works well too or choc shot)

1/4 tsp of cinnamon

1/4 tsp of ginger

Some butternut squash microwaved till soft. I peel it after, you need about 4-5 tbs worth, I didn’t weigh mine (added bonus of speed food) &

50ml skimmed milk (use any from your HEA options)

Mix together and bake on 180 for 13 minutes approx or until cooked through, I pre heated my oven first.

Add some fat free Greek yogurt and berries or quark. I used less than 1/4 syn of blueberry syrup from protein works

Rocky Road Chocolate Mousse

4 syns (if hifi bar is not used as part of healthy extra b)
1 syn (if hifi bar is used as part of healthy extra b)

To prepare this amazing and deliciousYou’ll need:

5 tbsp Quark (free)
1 tbsp Choc Shot (1 syn)
2 tbsp Sweetener (free)
1 Rocky Road* hifi bar (3 syns or half healthy extra b)
6 Strawberries (free)

*You can use any hifi bar, but be sure to check the syn value

Method

1. Mix all the quark with the Choc shot until creamy
2. Add the sweetener and stir until it has combined with the quark
3. Roughly chop the hifi bar and strawberries into small chunks
4. Layer the ingredients in a glass dish by starting with the quark mix, then hifi bar, then strawberries
5. Repeat until you have used all the ingredients.
This can be eaten as a snack between meals or served as a desert. Strawberries are a speed food, so you are getting your 1/3 quota with this recipe.

Slimming World Duck Pancakes

Ingredients

skinless duck breasts – 3 x 175g
Chinese five-spice powder – 4 tsp
Szechuan peppercorns, coarsely ground – 1 tbsp
ground star anise – 1 tsp
dark soy sauce – 6 tbsp
sesame oil – 1 tsp
Low calorie cooking spray
Chinese rice flour pancakes – 8
plum sauce – 8 level tsp
bunch spring onions, finely shredded – 1
cucumber, halved lengthways, deseeded and cut into strips – 1/2

Instructions

Place the duck breasts in a ceramic bowl in a single layer.
Mix the five-spice powder, peppercorns, star anise, soy sauce and sesame oil together in a bowl.
Pour this mixture over the duck, cover and marinate for 8 hours or overnight if time permits.
Preheat the oven to 180°C/160°C Fan/Gas 4.
Spray the duck lightly with low calorie cooking spray. Heat a large frying pan until hot and sear the duck breasts for 2-3 minutes on each side.
Transfer to a non-stick baking sheet and roast in the oven for 10 minutes.
Remove the duck from the oven, thinly slice the flesh and place in a warmed dish.
Warm the pancakes according to the packet instructions.
To assemble, spread 1 teaspoon of plum sauce on to each pancake and top with the spring onions, cucumber and duck. Carefully wrap the pancakes around the filling and eat immediately.
