Slimming World’s raspberry meringues

0

Meringue usually takes well over an hour to make but Slimming World’s super-speedy version cooks in less than 20 minutes – and it’s the ideal topping for deliciously sweet raspberries. This recipe serves 4 people and would be the perfect treat for friends when it’s your turn to host dinner.

Ingredients
4 sponge fingers, roughly broken up
450g frozen raspberries, thawed
1tbsp sweetener
3 egg whites

Method

Preheat the oven to 220C/200C fan/gas 7.
Divide the sponge fingers between 4 heatproof ramekins.
Lightly crush the raspberries, stir in half the sweetener and spread the mixture over the sponge fingers.
In a clean bowl, whisk the egg whites with the remaining sweetener until stiff and glossy. Spoon the mixture over the raspberries and bake for 8 minutes or until lightly golden.
Dust with icing sugar if you like (1 Syn per level teaspoon). These are best served hot.

Pizza using Instant mash

0

Hi All.
here is my recipe for Pizza using Instant Mash
Pete’s Pizza made from Instant Mash (3)

Use 125g from a pack of Sainsbury Instant Mash (250g)
One Tsp of mixed herbs.
Mix together then add hot water until the mix is like bread doe.
Add 1 egg and mix.
Spray a Flat Pan with 3-4 Fry Light shots, wipe across pan.
Press the mix into the pan and cover in clingfilm, rolling out with a rolling pin as thin as possible, remove clingfilm.

Cook one side until light brown then slide onto a flat plate with care, add 2-3 Fry Lights then return the pizza base and cook other side 3-6 mins depends on thickness.
Allow to cool on a cake rack.

Put Passata in a pan enough to cover Pizza base, add 1 TSP Tomato Puree and a few drops of “Worcester Sauce”,add chopped basil leaves, heat till thickened but DO NOT BOIL.
Coat the Pizza base with the Passata, cook your onion in balsamic vinegar until soft, add to base.

Add your choice of “Toppings”

This was my choice of Toppings : 5balls/40g Mozzarella, 1 slices of Lean Ham, 2 Mushrooms, sprinkled with 28g of Mild Hard Cheddar and place on Pre Heated Pizza Stone at 180/190 and cook until the cheese is bubbling.

Eat with Salad.

Syn free

Ingredients

5 scan bran
300g/3 medium size carrots
1 egg
3 Tbsp sweetener
½ tsp cinnamon
1 tsp vanilla extract
1 tsp nutmeg
Pinch salt
Zest from 1 lemon

Method

Break the scan bran into a mixing bowl and add boiling water, a bit at a time to soften them, mash into a smooth mix.

Grate the peeled carrots, drain as much liquid out of them as possible, and then place in a towel and wring out any remaining liquid. Add to mixing bowl along with the egg, sweetener and spices & lemon zest, mix well.

Preheat the oven to 180c and prepare a loaf tin, line with greaseproof paper cut to fit, spray with fry light.

Place on the middle shelf for 30 mins, insert a metal skewer into the middle of the cake and when you pull it out and it comes out clean, the cake is done.

Remove from the tin and allow to cool on a wire rack.

Half syn Cake

0

Half a syn for the Whole cake on all plans.

Ingredients

Eggs, separated – 4
Tub of park – 1
Baking powder – 1 tsp
Sweetener – 5 tbsp
Vanilla extract – 1/2 tsp
Fromage frais – 3 tbsp
Fresh fruits of your choice
Raspberries and strawberries

Instructions

Preheat oven to 180c and line 2 sandwich tins, spray with fry light.
Whisk the eggs whites in one bowl until they reach the soft peak stage.
In another bowl whisk together the egg yolks, 4 tbsp sweetener, half the tub of quark, baking powder and the vanilla extract. Then whisk in half the egg whites.
Fold in the remaining egg whites with a metal spoon.
Tip the mixture into 2 sandwich tins which have been lined with baking parchment and sprayed with fry light.
Bake in the oven until well risen, golden brown and a skewer comes out clean, approx 20 mins. It will sink when you take it out so don’t be alarmed.

Leave to cool for 5 mins then turn out and peel off the baking paper and place on a cooling rack to cool entirely.
Meanwhile take the other half of the quark and mix with 1 tbsp of sweetener. You can also add fromage frais at this stage too.

Spread half of the mixture on top of one cake and put the rest of the mixture on top and decorate with more fruit.
