Slimming World’s ham and Portobello mushroom ring pizza

Ingredients
125g strong bread flour
1 x 7g sachet instant active yeast
1 tsp salt
4 shallots, finely chopped
3 garlic cloves, crushed
2 tsp dried oregano

400g can chopped tomatoes
4 tbsp tomato puree
Small handful of finely chopped fresh basil
Salt and freshly ground black pepper
75g Portobello mushrooms, sliced, halved or quartered
100g lean ham, visible fat removed, cut into bite-sized pieces
Small handful of roughly chopped fresh oregano
Large handful of rocket leaves

New York Cheesecake (Slimming World)

Ingredients

For the base
5 scan bran
28g cocoa powder
2 eggs
half cup sweetener
6 x 250g tubs of Quark
56g flour
16 tablespoons sweetener
3 eggs
2 vanilla with chocolate sprinkle or plain vanilla muller light yogurts

For the topping
1 muller light yogurt
Seasonal fruit

1.5 syns per portion on Slimming World (19.5 syns the whole thing)

FRYING PAN QUICHE

ok so this morning i made frying pan quiche i suppose you could call it fritata but im calling it quiche

so what went in
broccoli 2 good handfuls
onion 1 large
sweetcorn 1 big handful
a few cooked new potatoes chopped
11 eggs
and 180 g reduced fat grated mature cheddar
and a bit of ground pepper

 

YOU NEED A GOOD NON STICK PAN OR IT WILL GO WRONG WHEN YOU TRY TO REMOVE FROM PAN

i havent put specific quantities of anything other than the cheese (which is 4 hex A’s so a quarter of my quiche will be a hex a)because you can put in as much or as little as you want and the eggs and cheese will also vary depending on pan size

ok so i steamed my brocoli until it was slightly undercooked
i fry my onion in frylite then add brocoli, sweetcorn, potatoes (you can add any veg) peppers are v good in quiche or just onion and bacon but i do like to add potato as it is very filling

ok so once onion is soft and all veg is lightly fried turn off heat and leave to cool a little

whisk up your million and one eggs then mix in most of the grated cheese (reserving some for the top)

pour egg cheese mix into the veg in pan mix briefly to evenly mix veg and egg together

turn on the pan and cook on low until the egg starts to set sprinkle with cheese and put pan under the grill to set the egg on the top and brown the cheese

leave to cool and carefully loosen and turn out or serve from the pan

 

Slimming World Weetabix Cake

2 Weetabix
110g sultanas
150ml skimmed milk
150ml water
110g self-raising flour
1 teaspoon mixed spice
15g artificial sweetener
1 egg, beaten

One Person Omelette

Serves 1

Ingredients

1 Egg (ff)
4-5 medium size mushrooms (s) (sff), sliced into 5mm pieces
1 Tomato (s) (sff), sliced in half
1tbsp herbs of our choice

Method

Slice the mushrooms, enough to cover the frying pan, (they will shrink when cooked).
Spray a frying pan with Fry Light and add the mushrooms, cook for 5 mins until they reduce in size, add the cut tomato, cook for a further few minutes until the tomato is cooked.
Whisk the egg, add seasoning and pour over the mixture in the pan, add the herbs, cover with a lid and cook until the egg has set, serve while hot.

 

Slimming World Quiche

This is one of my favourite dishes to make on Slimming world because it’s all inclusive (I don’t have to add veg) so I can grab a slice anytime I’m feeling snacky and not worry about adding in healthy extras.. it’s also REALLY filling on account of the eggs and (for those of you following the plan) totally syn free. I can see how those of you who aren’t on Slimming World might not see this as an uber-healthy dish but the bacon is without it’s fat, the cheese is minimal and low in fat. Most versions of the Slimming World Quiche involved cottage cheese and I cannot abide that stuff so this is my non-cottage cheese version

First I grease a dish (I use fry light but you can use whatever you wish) and then line it with bacon (again I use lean bacon but you can use regular if you prefer) and bake it for 10 minutes. I do this because I don’t totally trust that it will cook underneath the eggs etc, I’m sure it would but y’know.. just to be safe. I then mix together 4 or 5 eggs (yolks and all) and a handful of a light mature cheddar.

If you want to measure it and you’re on the plan just be sure that you account for your healthy options worth of cheese and how much of the quiche you will be eating in a day. I might eat half at most. I add in a vegetable of your choosing.. I usually use mushrooms as it’s a breakfast dish for me but broccoli worked really well and I’ll make it with it again. Once the bacon is pre-cooked I pour the mixture into the ‘crust’ and bake for 20mins on 200.. that’s it. It’s so easy to make and SO yummy.. if I make it with just egg, bacon and cheese the whole family will eat it but given that I follow the extra easy plan I have to get in my veg in each meal so for me it’s better to include them so I can go grab a slice whenever I’m feeling peckish.

If I’m having it as part of a meal I add beans (super speedy – ie: they help you lose weight faster) and it really fills me up, if I eat this at 10 I’m good til tea time which works for me cause I’m often too busy to worry about lunch.. although I’ve been really into mugshots recently – has there ever been a faster, tastier food? I don’t think so.. well.. maybe chocolate 😉

Crustless Cheddar, Onion and Courgette Quiche

This tasty recipe is perfect for a party or family dinners

Ingredients

Low calorie cooking spray
onions, peeled, halved and thinly sliced – 4
large courgettes, thinly sliced – 3
bottle roasted peppers in brine/vinegar, drained and finely chopped – 300g
large eggs – 12
garlic cloves, peeled and crushed – 2
tomato purée – 4 tbsp
dried mixed herbs – 2 tsp
reduced fat Cheddar cheese, grated – 200g
Salt and freshly ground black pepper

Instructions

Preheat the oven to 180°C/160°C Fan/Gas 4.
Spray a large frying pan with low calorie cooking spray and sauté the onions over a medium-low heat for around 15 minutes until lightly browned.
Transfer to a wide bowl and set aside.
Wipe the frying pan with kitchen paper and re-spray with low calorie cooking spray.
Place over a medium heat, add the courgette and stir-fry for around 10 minutes or until lightly browned.

Remove from the heat and add to the onions along with the roasted red peppers.
Beat the eggs with the garlic, tomato purée, dried herbs and three quarters of the cheese.
Season well.
Lightly spray a round, ceramic deep pie dish (about 30cm across) with low calorie cooking spray.
Put the onions, courgettes and red peppers in the prepared dish and pour over the egg mixture.
Bake in the oven for 40-45 minutes until almost set.
Sprinkle over the remaining cheese and return to the oven for another 15 minutes or until lightly browned on top and just set.
Remove from the oven and serve warm or at room temperature, cut into wedges.

Slimming World Choco-Mint Mousse

I love chocolate! That’s all I really need to say, I saw this dessert in an old Slimming World magazine of my mums and I just had to make it, it was a little tricky, and next time I shall use a little bit of green food colouring, just to make the mint sections stand out even more.
Information:
Serves 6 People.
Preparation Time: 25minutes.
Chilling Time: 30minutes.
Syns Per Serving: 3.5

Ingredients.
♥ 85g plain chocolate
♥ 4 large eggs (separated)
♥ 4 tbsp artificial sweetener
♥ 1 tsp pepper extract
♥ 142g fat free natural fromage frais
♥ fresh mint

How to make Choco-Mint Mousse:
1) Melt the chocolate in a small bowl over a pan of simmering water. Remove the bowl from the heat and stir in the egg yolks, half of the artificial sweetener and half the peppermint extract.

2) Place the fromage frais, the remaining sweetener, remaining peppermint extract and a handful of mint leaves in a food processor. Whizz together until the mint is finally chopped, then transfer the mixture into a bowl.

3) Whisk the egg whites until they form soft peaks. Divide the egg whites between the two bowls and gently fold into the mixtures.

4) Divide the chocolate mixture between six glass serving dishes. Top with the fromage frais mixture, using a teaspoon, lightly fold through the mixture a few times to create a marbling effect.

5) Refrigerate for 30minutes or longer before serving with a mint leaf on top to decorate.

Now I know how to do this and how amazing it tastes, I am going to try it with orange, to create a choco-orange mousse 🙂

Syn free lasagne on EE (using hex A)

This lasagne is really nice and even if you don’t like quark, you should still like it!
Makes 6 generous portions

Ingredients
400g extra lean beef mince
2 onions
frozen sliced peppers (or fresh)
fresh garlic
mixed herbs
carton of passata
lasagne sheets

252g grated low fat mature cheddar
2 tubs quark
1 egg
skimmed milk
dried parsley
english mustard

Chop onions and fry in frylight along with the frozen sliced peppers. Once cooked transfer to a large saucepan or wok.
Fry the mince beef until brown and add to the saucepan.
Add the passata, mixed herbs, 3 crushed garlic cloves and salt/pepper to taste. Leave to simmer, stirring occasionally.

Empty 2 tubs of quark in to a seperate saucepan and add one egg. Heat gently while mixing together. Add a dash of skimmed milk if the white sauce is too thick. (the amount needed won’t even average out to half a syn per portion). Mix in some dried parsley and quarter tsp of mustard.

Using a lasagne type dish, place half of meat mixture in bottom, top with lasagne sheets, add half of the white sauce and the remainder of the meat mixture.
Add a further layer of lasagne sheets, top with the remaining white sauce and then add the grated cheese evenly over the top.
Bake in oven gas mark 6 for 30-35mins.

 

Herbed cheese and bacon soufflés

Light and fluffy with a delicious cheese-filled center.

Prep Time : 20 minutes
Cook Time : 20 minutes

Ingredients

Low calorie cooking spray
lean bacon, all visible fat removed, cut into 1.5cm pieces – 100g
red chilli, deseeded and finely chopped – 1
spring onions, finely chopped – 8
eggs, separated – 6
finely chopped fresh chives and dill – 6 tbsp each
Parmesan cheese, finely grated – 100g
English mustard powder – 1/4 tsp
Salt and freshly ground black pepper
Mixed salad leaves, to serve

Instructions

Preheat the oven to 180°C/160°C Fan/Gas 4.
Prepare a bain-marie by placing a roasting pan one-third full of warm water into the oven.
Lightly spray the insides of six individual ramekins or one medium soufflé dish with low calorie cooking spray.
Spray a frying pan with low calorie cooking spray and stir-fry the bacon, red chilli and spring onions for 6-8 minutes, then drain thoroughly in a metal sieve to get rid of any excess moisture and pat dry with kitchen paper.
Meanwhile put the egg whites into a bowl and whisk until just stiff.
In a separate bowl, beat the egg yolks and add the bacon and spring onion mixture, chopped herbs and three-quarters of the cheese.
Season with the mustard powder and some salt and pepper.
Using a metal spoon, fold the egg whites into the egg yolk and bacon mixture.
Spoon this into the ramekins, almost to the top, and sprinkle over the remaining cheese.
Place in the bain-marie and cook for around 20 minutes until risen and lightly set.
Serve with a few mixed salad leaves.
