Filo Apple Pies

Makes 36 (1.55 syn each)

Ingredients

Jus Rol filo pastry 6 sheets (each sheet is 6 syns but is cut into 6=1 syn)
Sainsbury’s bramley apple sauce 475g jar (use 1tsp per portion=10g= 0.55 syn)
Cinnamon

Method

Heat the oven to 180c; line a baking tray with baking parchment. Working quickly, place six filo sheets on top of each other and cut in half, then cut each half into three strips lengthways giving you 36 pieces, keep covered with a damp cloth until ready to use, lay out and spray with Fry Light, place 1tsp of the apple mixture at the bottom of the strip, sprinkle with cinnamon, fold diagonally to enclose the ingredients and form a triangle, press down and fold again until you reach the end, seal the edge down with a pastry brush dipped in water. Repeat until all 36 are made.
Place on a tray and spray with Fry Light and bake for 12-13 mins or until golden in colour, serve while warm.

 

Fajita Chicken

Hartley’s sugar free blackcurrant jelly 10Cal per portion
Strawberries (ss)(sff)

Grapes(sff)

Method

Cut grapes in half and cover the base of glass dishes.
Sprinkle the packets contents into 285mL/.5Pt of boiling water, stir, then add
285mL/.5Pt of cold water
Pour into the dishes & float the cut strawberries to cover the top, put into a fridge until set.

 

Delicious berry pancakes

fresh mixed berries – 400g
sweetener – 1 tbsp
Icing sugar, to dust

Ingredients:

150g packet dried egg noodles
3 garlic cloves
4 spring onions
2 carrots
113g/4oz mangetout
113g/4oz mushrooms
1 red pepper
4 cooked chicken breasts
Fry Light
1 tsp finely grated root ginger
4 tbsp soy sauce
85ml/3fl oz chicken stock made with Bovril
142g/5oz beansprouts
Salt and freshly ground black pepper

Instructions:

Cook the noodles according to the packet instructions, drain and set aside.
Meanwhile prepare the ingredients: finely grate the garlic; slice the spring onions; cut the carrots into matchsticks; halve the mange tout lengthways; halve the mushrooms; deseed and thinly slice the pepper; roughly shred the chicken.

Heat a frying pan sprayed with Fry Light, add the ginger, garlic and spring onions and fry for 2-3 minutes.
Add the soy sauce, chicken stock, carrots, mangetout, mushrooms, red pepper and beansprouts and stir fry for a further 3-4 minutes. Add the chicken and noodles, toss together and heat through. Season well and serve immediately.

Giant Jaffa Cake

I made this a while ago and i was just checking up all the syn value of it and its not to bad for the whole cake its only 51 syns and it can be divided into as many parts as you want

35grams of plain chocolate i used bournville
2 sachets of sugar free orange jelly crystals
1 flan base from asda

make the jelly up and let it set in the fridge for a few hours

when its ready place it on top of the flan base
melt the chocolate and spread over the top and leave it to set for 30 mins
then divide and tuck in yummmmm

I got 12 portions out of mine so thats 4.25
syns per slice

Vegetable Frittata

Most vegetables would work well so swap and change depending on your mood or the time of year.

Prep Time : 50 minutes

Ingredients

Low calorie cooking spray
spring onions, finely sliced – 8
garlic cloves, peeled and crushed – 2
red chilli, deseeded and finely chopped – 1
drained and finely chopped bottled roasted red peppers
sweetcorn kernels, drained – 200g can
fresh or frozen peas – 200g
eggs, beaten – 6
finely chopped fresh flat-leaf parsley – 4 tbsp
cooked macaroni – 250g
Salt and freshly ground black pepper

Instructions

Preheat the oven to 180°C/160°C Fan/Gas 4.
Spray a medium-sized ovenproof flan or pie dish with low calorie cooking spray.
Place all the ingredients in a large bowl and mix to combine. Season well and transfer to the dish.
Place in the oven and bake for 25-40 minutes or until the eggs have set and the frittata is golden brown.

one person’s Lunch (cold)

Ingredients

150g Sainsbury’s extra lean escalope’s (beef) (ff) sliced when cool
Iceberg lettuce (s) (sff)
1 Tomato (s) (sff) sliced
1 Cucumber (s) (sff) sliced
1 Chicory (s) (sff) sliced
1 hard boiled egg (ff) sliced
*extras
1tbsp Sainsbury’s “be good to yourself” mayonnaise ½ syn
1tbsp Branston 1syn

Method

Hard boil the egg for 6 mins and allow to cool, Heat a frying pan sprayed with Fry Light and cook the beef for 5 mins each side, remove and rest for 5 mins, then slice thinly, set aside.
Prepare your lettuce, tomato, cucumber & chicory on a plate, add the meat & egg.
Add * extra’s if required
When cold wrap in Clingfilm or an airtight box.

Orange cake (claiming to be Spanish)

Ingredients

4 eggs, separated
50g/2oz golden caster sugar
5 tbsp artificial sweetener
150g/5oz self-raising flour
1 tsp baking powder
2 tbsp finely grated orange zest
juice of 2 oranges
Syrup ingredients
zest of 2 oranges, finely grated into long strips
juice of 2 oranges
1 tbsp arrowroot

4 tbsp artificial sweetener

Method

Preheat the oven to 190°C/Gas 5. Line a 20cm/8in cake tin with non-stick baking parchment.
Place the egg yolks, caster sugar, sweetener, self-raising flour, baking powder and orange zest and juice in a bowl and whisk until thick and pale.
In a separate bowl, whisk the egg whites until softly peaked then fold them into the egg yolk mixture. Spoon this mixture into the prepared cake tin and cook in the oven for 25-30 minutes or until the cake is risen and firm to the touch. Leave to cool.
Meanwhile place all the syrup ingredients in a saucepan with 90ml/3fl oz of water and bring to the boil, whisking constantly. When it starts to thicken, remove from the heat.
Cut the cake into wedges to serve, drizzle with syrup and serve.
