Slimming World-friendly Lemon Drizzle Hi-fi tiramisu

Ingredients:

– 4 Lemon Drizzle Hi-fi bars (or similar Slimming Hi-fi bars of your choice)

– 300g fat-free natural Greek yogurt

– 250g quark

– 2 tablespoons powdered sweetener (or to taste)

– Zest of 1 lemon

– 1 teaspoon vanilla extract

– 2 tablespoons strong coffee (cooled)

– 1 tablespoon unsweetened cocoa powder (for dusting)

– Fresh mint leaves (for garnish, optional)

Instructions:

. Break the Lemon Drizzle Hi-fi bars into small pieces and set aside.

. In a large bowl, mix together the fat-free Greek yogurt, quark, powdered sweetener, lemon zest, and vanilla extract until well combined.

. In individual serving glasses or a large dish, layer half of the Hi-fi bar pieces at the bottom.

. Drizzle half of the cooled coffee over the Hi-fi bar layer.

. Spread half of the yogurt mixture over the Hi-fi bars and coffee layer, ensuring it’s evenly distributed.

. Repeat the layering process with the remaining Hi-fi bar pieces, coffee, and yogurt mixture.

. Dust the top of the tiramisu with unsweetened cocoa powder.

. Cover the tiramisu and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld together and the Hi-fi bars to soften.

. Before serving, garnish with fresh mint leaves if desired.
