Slimming World-friendly banoffee pie

Here’s a recipe for a Slimming World-friendly banoffee pie:

Ingredients:

For the crust:

– 100g digestive biscuits (or other low-syn biscuits of your choice)

– 50g low-fat spread, melted

For the filling:

– 2 large bananas

– 350g fat-free Greek yogurt

– 2 tablespoons powdered sweetener (or to taste)

For the topping:

– 1 tablespoon powdered cocoa (unsweetened)

– Freshly whipped cream made with low-fat yogurt (optional, for serving)

– Grated dark chocolate (optional, for garnish)

Instructions:

1. Crush the digestive biscuits into fine crumbs. You can do this by placing them in a sealed plastic bag and crushing them with a rolling pin or by using a food processor.

2. In a bowl, mix the biscuit crumbs with the melted low-fat spread until well combined.

3. Press the biscuit mixture into the bottom of a pie dish or individual serving dishes, creating an even layer. Place the dish(es) in the refrigerator to chill while you prepare the filling.

4. Peel and slice the bananas into thin rounds. Arrange the banana slices in a single layer over the chilled biscuit crust.

5. In a separate bowl, mix the fat-free Greek yogurt with the powdered sweetener until well combined. Adjust the sweetness to your taste.

6. Spoon the yogurt mixture over the banana slices, spreading it out evenly to cover the bananas.

7. Dust the top of the pie with the powdered cocoa.

8. Return the pie to the refrigerator and chill for at least 2 hours, or until set.

9. Before serving, you can top each slice with a dollop of freshly whipped cream made with low-fat yogurt if desired. You can also garnish with grated dark chocolate for added flavor and presentation.

10. Serve chilled and enjoy!
